Pumpkin Black Bean Soup

I'm a soup girl.  No doubt about it.  And I'm planning to make more beans this winter.  While Husband is finishing up the chicken fried cube steak and mushroom gravy, I'll be eating this.

It's really delicious.  I decreased the cumin to 1 T.  (I'm mean 3 T. cumin?  Really?) and added about 1 T. of Italian Seasoning.  I used chicken broth because I didn't have vegetable broth.  If you know the Osbornes, you know vegetarians don't eat here.  Husband is a carnivore. 

Remember to try things.

  2. It was good Richard. It should be pretty healthy. If you wanted a little chicken sausage or something in it, that would go well. I think it would freeze well. We'll see. Darrell is sick so I froze half of this pot and made a big pot of chicken soup. Let me know what you think.

  3. I made it yesterday and we loved it. I pureed it a second time, after cooking but before serving, and served it with a small dash of sour cream in the middle. Vel said the color was the only knock on the soup. We both rated it an A.
